Ingredients

2 tbsp. olive oil

2 carrots, chopped

1 small onion, diced

2 ribs celery, diced

3 cloves garlic, minced

2 tsp. salt

1 tsp. pepper

1 pinch oregano and red pepper flakes

2 tbsp. tomato paste

1 can chopped tomatoes

1 jar Hot Tom

1 zucchini, chopped

4 cups broth, chicken or veggie

1 cup heavy cream

½ box lasagna noodles

2 big ol' scoops fresh ricotta

2 cups shredded mozz

½ cup grated Parmesan cheese

Herbs (we love fresh basil and parsley)

Directions

In a large pot over medium heat, add olive oil, carrots, onion, & celery; sauté for 3-5 minutes.

Add 3 cloves garlic, salt, pepper, oregano, red pepper flake, & a squeeze of tomato paste; sauté for another minute.

Add chopped tomatoes and Hot Tom; bring to a light simmer.

Add zucchini, veggie broth, & heavy cream; bring to a simmer and let cook for 10 minutes.

Add half box of broken lasagna noodles and cook according to package instructions.

Finally, add fresh ricotta, mozz (shred your own!!), Parm, & herbs (we like parsley and fresh basil). Give it all a stir so it gets cheesy and gooey. 

Plate and garnish more fresh basil and fresh grated Parm.
