Lasagna Soup

Lasagna + Soup = Lasagna Soup. Need we say more?

Probably, yes, of course. When Lasagna Soup went viral on TikTok, we knew we had to give it the Hot Tom spin. It's like if you took all the tasty, rich aspects of both lasagna and soup and made them 1) quick and 2) a little bit spicy. We made our version vegetarian just because we love a lil zucchini :)



  • 2 tbsp. olive oil
  • 2 carrots, chopped
  • 1 small onion, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 2 tsp salt
  • 1 tsp pepper
  • pinch oregano and red pepper flakes
  • 2 tbsp. tomato paste
  • 1 can chopped tomatoes
  • 1 jar Hot Tom
  • 1 zucchini, chopped
  • 4 cups broth, chicken or veggie
  • 1 cup heavy cream
  • 1/2 box lasagna noodles
  • 2 big ol' scoops fresh ricotta
  • 2 cups shredded mozz
  • 1/2 cup grated parm
  • herbs (we love fresh basil and parsley)


  1. In a large pot over medium heat, add olive oil, carrots, onion, & celery; sauté for 3-5 minutes.
  2. Add 3 cloves garlic, salt, pepper, oregano, red pepper flake, & a squeeze of tomato paste; sauté for another minute.
  3. Add chopped tomatoes and Hot Tom; bring to a light simmer.
  4. Add zucchini, veggie broth, & heavy cream; bring to a simmer and let cook for 10 minutes.
  5. Add half box of broken lasagna noodles and cook according to package instructions.
  6. Finally, add fresh ricotta, mozz (shred your own!!), parm, & herbs (we like parsley and fresh basil). Give it all a stir so it gets cheesy and gooey. 
  7. Plate and garnish more fresh basil and fresh grated parm.
